Okay, so everyone loves a good pumpkin spice latte. Well everyone except for me (Andrea aka Pookie). You see, I don’t like coffee! Can you believe it! Call me a unicorn but I’ve just never gotten into the coffee craze. It’s also worth noting, it’s the second week of October and it’s been nearly a million degrees here in Atlanta. So, a hot beverage isn’t that appealing to me right now. But with the first day of fall a few weeks ago and everyone posting and talking about the Starbuck’s Pumpkin Spice Latte, it got me to thinking! Maybe I should try it.
So, last week I drove to my nearest Starbucks and boldly ordered my first Iced Coffee. I must admit it was DELISH! The Pumpkin Spice Topping with Whipped Cream and brewed Espresso was the fix I needed! Since then I’ve been obsessed with Pumpkin Spiced Latte. But since $5 a pop is a little too rich for my pockets, I’ve been on the lookout for recipes I can do at home. Check out this Iced Pumpkin Spiced Latte Recipe (made with Almond Milk no doubt) I found on Pinterest. It’s sure to become one of your fall seasons go-to drinks!
What You’ll Need
- 2 cups unsweetened vanilla almond milk
- 1 tsp cinnamon
- 1 generous T real maple syrup
- 1/4 cup canned pureed pumpkin
- 2 shots espresso
- Ice
What You’ll Do
Fill two large pint glasses with ice. Combine almond milk, cinnamon, maple syrup and pumpkin in a blender and blitz briefly to combine. (Alternatively, whisk together in a large bowl.) Divide evenly between glasses. Top each with a shot of espresso. Add a Cute Paper Straw for good measure!
