SIMPLE CHRISTMAS SUGAR COOKIE RECIPE

One of my favorite memories was baking cookies for Santa on Christmas Eve with my mom + Anna when I was a child. While my mom's favorite was peanut butter, my favorite then and now is sugar cookies!  We would listen to our favorite Christmas songs on the radio while holiday movies played on the TV in the background.

I've continued this tradition with Lilly. We've tried different recipes over the past few years, and the results have run the gamut. Some were delicious but didn't hold their shape. Others were beautiful but didn't taste so good. After a few trials and errors, I think we've found the best and definitely easiest recipe. They keep their shape, and they are simply delicious!

This sugar cookies recipe is fast, simple and will become a favorite for many years to come!

WHAT YOU NEED:

1 ½   cups butter softened to room temperature – Salted or unsalted, your preference

2       cups white granulated sugar

4       large eggs – to add moisture and structure and stability.

1       teaspoons vanilla extract

5       cups all-purpose flour

2       teaspoons baking powder

1       teaspoons salt - if using salted butter, can cut added salt back a touch

 STEPS:

  1. Preheat oven to 400 degrees
  2. In a large bowl/your mixer, cream butter and sugar. Add eggs and vanilla. Gradually add flour, baking powder, and salt, mixing well. Refrigerate dough for 1 hour. Quick tip: refrigerate the remaining dough until you’re ready to roll it out.
  3. This is what makes them SO simple! Line your cookie sheets with parchment paper. Roll out dough to 1/4-1/3″ thick.
  4. Press your cookie cutter onto the cookie sheets, leaving a half-inch or so between each. Peel away your excess dough. {No flouring needed!}
  5. Bake 6-7 minutes and allow to cool. Decorate with your favorite sugar cookie frosting.

DECORATING

Options for decorating your cutout sugar cookies is endless! We prefer using Betty Crocker Christmas Colors Decorating Cookie Icing, because its quick + easy. But you can frost with hard royal icing, soft royal icing, decorator frosting or poured cookie icing. Sprinkle your cookies with colorful sprinkles, or accent with edible glitters and dusts or sugar decorations! Your options are limitless!

 

Tips
  • Prepare and plan ahead, because you’ll need to refrigerate the dough for at least an hour before rolling it out
  • Refrigerate remaining dough while you’re rolling out the dough to keep it solid
  • Back the cookies in a pre-heated oven for the best results
  • Let the cookies cool to room temperature before frosting them
